Its been so nice with the windows open I just can't hold back the baking urges. Long ago, in the time before Pang and I became roomies, she bought me some lovely poppy seeds from the Amish Market in Hagerstown. So finally I made something with them.
They are little wee muffins
Orange Poppy Seed Muffins
1/3 cup butter, softened
1 cup sugar
1 1/3 cup all purpose flour or part whole wheat
1/2 tsp salt
1/2 tsp baking soda
1 tbsp poppy seeds
1 egg
1/2 cup sour cream or yogurt
2 tbsp grated orange peel
2 tbsp orange juice
1. Preheat oven to 400 degrees. Grease 12 muffin tins.
2. Cream together butter and sugar (there is a correct and incorrect way to do this as I learned the hard way). Add the other wet ingredients to the creamed mix one at a time.
3. Mix the dry ingredients together and then add to the wet. Stir until just blended. Bake 17-20 minutes.
Orange Cream Cheese Butter
1/2 cup butter
1 (3oz) package cream cheese, softened
1/4 cup powdered sugar
1 tbsp grated orange
1. Combine all ingredients- mix until smooth and store in a covered container in the fridge.
2. Serve over warm muffins
They were so good I ate two right off the bat

lacy,
i have been cooking for real real again for the first time since last spring and, in an emulation of you, thought of taking pictures of the things i make and posting them with my recipes on my blog, but my pictures (thus far of my pistachio chicken--yum) have failed.
have you any tips for a poor photographer?
what kind of camera have you been using. If you have an SLR you may want to try some selective focusing( like just picking the most important or interesting spot to be in focus and leaving the rest kinda soft). If you noticed, I tend to favor that when I am photographing food.
Also...natural light is a must. I have tried photographing my food with a flash (on camera) and it always looks unappealing. If you have off camera strobes (give them to me!) then some soft side lighting works too but my guess is you don't. Hell I don't even have any and I probably should.
Can't wait to see what you have been making :)
Lacey....
I made the mistake of looking at your blog when I was very hungry. As a result, I'm going to go to the store and buy an orange so I can make these when I get home from bible study tonight. You used a mini-muffin tin. Any idea if the recipe will easily translate to a big one? (I have a newer muffin tin with holes and silicone muffin holders that pop out- very convenient. I've never had great luck with the mini-tins I have.
Last time I messed with sizing and stuff for a recipe, it was suuuuuuch a pain. Just curious if you knew how well this would translate.
